Seed Biscuits


1/3 cup of pumpkin seeds

1/3 cup sunflower seeds

1/2 cup of dried apricots

1 cup of coconut

1/2 cup of oats or almonds or walnuts (depending what you like and allergies)

Pinch of salt

1 – 2 tspn vanilla extract

4 tablsp Rice malt syrup

1 tablsp butter/nutelex/coconut oil (depending what you like


  1. Preheat oven to 180 degrees
  2. Place all dry ingredients in Thermomix   speed 7 for 20 secs
  3. Scrap down sides of bowl and repeat if needed
  4. Melt wet ingredients on stove or microwave
  5. Mix dry and wet ingredients together
  6. Divide into balls and place on baking trays
  7. Flatten them down on trays
  8. Bake in oven for 12-15mins
  9. Allow to cool and store in air tight container
