Ingredients:
1/3 cup of pumpkin seeds
1/3 cup sunflower seeds
1/2 cup of dried apricots
1 cup of coconut
1/2 cup of oats or almonds or walnuts (depending what you like and allergies)
Pinch of salt
1 – 2 tspn vanilla extract
4 tablsp Rice malt syrup
1 tablsp butter/nutelex/coconut oil (depending what you like
Method:
- Preheat oven to 180 degrees
- Place all dry ingredients in Thermomix speed 7 for 20 secs
- Scrap down sides of bowl and repeat if needed
- Melt wet ingredients on stove or microwave
- Mix dry and wet ingredients together
- Divide into balls and place on baking trays
- Flatten them down on trays
- Bake in oven for 12-15mins
- Allow to cool and store in air tight container
