Berry Cocoa Loaf

Ingredients:

  • 2 cups of oats
  • 3 eggs # or egg substitute
  • 1 tin of Chickpeas (3/4 liquid drained)
  • 1/2 cup Rice Malt Syrup
  • 1/3 cup Tapioca Flour
  • 2 tspn Baking Powder
  • 1 cup of Frozen Berries (good if they are 3/4 defrosted before you mix them in)
  • 1/2 cup Cocoa Nibs (or whatever form of choc you like)

# Egg substitutes: of course it depends what you are making but some ideas for egg substitutes that I have found that work are: Organ egg substitute, bananas, tofu, chickpea brine, adding a little extra butter/oil

Method:

  1. Preheat oven to 180 Degrees Celsius
  2. Place oats in Thermomix speed 7 about 20 seconds
  3. Tip oats into mixing bowl, add tapioca flour, baking powder and mix lightly
  4. Place chickpeas in Thermomix on speed 7 for 25 seconds, make sure they are fully pureed
  5. Add to oats and flour mix with berries and cocoa
  6. Place whisk in Thermomix crack eggs and put on speed 4 for 45 to 60 seconds
  7. Fold into mixture lightly
  8. Put in loaf tin
  9. Bake for 40 minutes may need more or less depending on what egg substitute you used
