Ingredients:
- 1 3/4 cup of flour ( I used, mixture of tapioca, coconut, buckwheat)
- 1tsp baking powder
- 1tsp bicarb soda
- 2 bananas
- 2 eggs ( our son is allergic to egg white so I just used the yolks)
- 100 grams dates
- 100 mls water
- 3 tablespoons of butter/coconut oil/nutelex
Method:
- Place dates and water in saucepan, bring to boil and simmer until soft
- Place flour, bicarb and baking powder in mixing bowl
- Melt butter and add to dry ingredients
- Mash banana in a bowl and add to dry ingredients
- Add in date mixture
- Whisk eggs and fold into mixture
- If mixture not as runny add small amount of milk (any sort I used rice milk)
- Place mixture into muffin tray and Bake for 25 mins 180 degree oven
