Banana and Date Muffins


  • 1  3/4 cup of flour ( I used, mixture of tapioca, coconut, buckwheat)
  • 1tsp baking powder
  • 1tsp bicarb soda
  • 2 bananas
  • 2 eggs ( our son is allergic to egg white so I just used the yolks)
  • 100 grams dates
  • 100 mls water
  • 3 tablespoons of butter/coconut oil/nutelex


  1. Place dates and water in saucepan, bring to boil and simmer until soft
  2. Place flour, bicarb and baking powder in mixing bowl
  3. Melt butter and add to dry ingredients
  4. Mash banana in a bowl and add to dry ingredients
  5. Add in date mixture
  6. Whisk eggs and fold into mixture
  7. If mixture not as runny add small amount of milk (any sort I used rice milk)
  8. Place mixture into muffin tray and Bake for 25 mins 180 degree oven
